Pork goes well with anything , but with wine its a totally different story . So I present to you my recipe of pork with red wine .
You can never put too much pork in your mouth as far as I am concerned . ~ Lewis Black
- 1 kg pork (preferably one-third fat) .
- 250 gms onion .
- 100 gms tomato .
- 100 gms of ginger garlic paste ( Homemade for better results ) .
- 30 ml mustard oil ( approximate ) .
- Green chillies and coriander leaves according to taste .
- 90 ml red wine ( approximate ) .
Lets begin by washing the pork and putting it in a pressure cooker . Add half a teaspoon of salt and turmeric each to the pork along with about 250 ml water . Close the lid and put it on the stove . Wait for 3-4 whistles and then remove it from the stove and let it cool . Once the pressure is released , open the lid and drain the water .
Heat mustard oil in a pan and put few cumin seeds in it. Chop 4 large onions and add to the pan when the oil is warm (add more onions if u want more of a thicker gravy) . Slice green chilies lengthwise into halves and add according to taste . Stir for few minutes and add about half a tablespoon ginger garlic paste (too much ginger can make it taste bitter). Add the pork and stir them . Add salt according to taste . Cover the pan and let it cook in simmer for about 5 minutes. Chop the tomatoes roughly and add to the pan . Cover and let it cook for sometime . Stir it every 5-6 minutes till the pork is almost cooked (becomes soft and tender) then add about 90 ml of red wine (port wine tastes best). Add about half a teaspoon of ginger garlic paste and keep stirring every few minutes till the wine turns into a thick gravy. By then the pork will become very soft and succulent.
Switch off the gas and let it cool. Garnish with the fresh coriander leaves and thinly chopped onions (spring onions for better taste) . There you have your pork with red wine . Don’t wait till it gets cold …
